Potato Pancakes

Ingredients

2.5 pounds Potatoes
4 ounces Onions (chopped)
2.5 ounces Egg Beaters
1.5 ounces Flour
½ tsp. Salt
¼ tsp. Baking Powder
1 ounce Skim Milk

Method

  1. Peel and shred potatoes
  2. Chop Onions
  3. In a mixing bowl combine potatoes, onion, egg substitute, flour, salt, baking powder, and non fat milk
  4. Heat griddle or frying pan to 350 degrees
  5. Pour three ounces of mixture onto griddle and turn after 3-4 minutes
  6. Remove fro griddle when pancakes are golden brown.

Yield 16 pancakes, 8 servings, two pancakes per serving
