Eating small portions and limiting carbohydrate intake are not solutions to excess weight. Most Wellspring campers know this as they have tried to lose weight before in various ways. Most campers have tried many different diets, seen nutritionists and dietitians, maybe even attended a weight loss camp or spa before – and none of it has worked. Wellspring Hawaii’s Nutrition and Culinary curriculum does work.
The Wellspring nutrition program focuses on what matters for long-term weight loss -- gaining the knowledge and skills proven by research to be required in order to become a successful long-term weight controller. The curriculum was developed by researchers and exceptional students at the Wellspring Academy, our revolutionary boarding school in California; in other words, it was developed by long-term weight controllers based on what science and experience have proven works.
An overview of topics covered displays the useful nature of this program:
- Comprehending weight gain and biological factors
- Why fad diets do not work
- Barriers to weight loss and how to overcome them
- Figuring out the scientific basis of diets
- Distinguishing scientific credentials from marketing ploys
- Becoming familiar with what science has proven about weight loss
- Strategizing ways to stay satisfied while eating low-fat and low-calorie
- Realizing the health benefits of an active and low-fat lifestyle
- Learning how to master the grocery store aisles and read food labels for what really matters
- Restaurant Training – what and how to order while successfully losing and maintaining

Culinary Education
Unfortunately, Wellspring Hawaii cannot last forever and campers must return home with the skills necessary to face everyday challenges.
A major tool for success is Wellspring’s culinary program. Armed with the skills to cook low-fat favorites, campers return home ready to transform their kitchens into low-calorie, delicious havens.
Many of our alumni parents and siblings have also shed pounds and benefited from this aspect of the Wellspring program.

Wellspring Hawaii campers learn to cook a range of very low-fat, low calorie-density foods – exactly the kind of food we eat at camp.
The combination of nutrition and culinary training ensures that campers go home ready to shop for, know the nutritional value of, and prepare foods that support permanent weight control.
